Avo & Co the best veggies and fruit in town!!

The biggest challenge in Singapore is how not to spend a fortune in food every month, mostly because we are a family of 5 and i really try to give the best meals to them! You have many places that you can buy wonderful veggies and fruit, of course the wet markets are the cheapest ones[not my favourite option though because im very sensitive to strong smells, like Durian, lamb, fish, etc), the best one in my opinion is the WholeSale Center in Pasir Panjang but you need to buy big amount (you always can share with your friends).
But after 5 years i just discovered a very good way to buy the best veggies and fruits in Singapore that doesn't crash my budget, Avo&Co, you can take a look in the website and order a small or big basket, add some favourite veggies/fruits and just wait for the delivery at home. My first basket arrived last wednesday and I try to use it for our dinner. I had some prawns to do my delicious coconut curry and i thought that the cauliflower would do a very nice "rice" as a side dish, a beautiful salad with some of this amazing veggies and fruits with a soft boiled egg. The boys really loved the peaches, super juicy and sweet they said!


 I have to admit that one of the things i miss most in my Paleo Diet it's the rice, in Portugal we eat white rice with everything, in every meal we always prepare rice as a side dish, even if we are having potatoes. But since, im so focus in finding the perfect diet for me to get more energy i really needed to find a substitute to this problem, and luckily i found it, cauliflower rice!
Give a go to this 'rice' and make sure that you use some spices to give extra flavour to it!

Ingredients for the 'rice':

  • 1 small head of cauliflower (4-5 cups riced)
  • 3 Tbsp cooking fat (I like olive oil but you can use coconut oil)
  • 2 tsp lemon zest (approximately 1 lemon)
  • 1/4 tsp black pepper
  • 1/2 minced garlic
  • 1/8 tsp Salt , to taste
Ingredients for the prawns curry:
  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp. crushed ginger
  • 1 tsp. curry powder
  • ½ tsp. turmeric
  • 1 tsp. ground coriander
  • 2 tbsp. lemon juice
  • 400 ml. full-fat coconut milk
  • Sea salt and freshly ground black pepper to taste
  • 800 gr. prawns, peeled
  • fresh thyme

Preparation: 


1. Trim cauliflower and place florets in a Food Processor (I used my Thermomix for 5 ser./vel.5).  Pulse until chopped to rice grain size.  Set aside.

2. Heat cooking fat in a large frying pan or Wok over medium-high heat.  Add cauliflower, minced garlic, pepper and salt to the oil and cook, stirring frequently until cauliflower is cooked al dente (about 6-8 minutes)
  


3. Stir in lemon zest cook 1 minute.  Reserve.
One of my favourite dishes is Curry, with chicken, crab, prawns or vegetarian, I also tried to find a recipe that would be tasty, full of flavour but with my Paleo concept. It was not difficult at all and all the family enjoy this recipe. Very easy to do and a very good flavour variation in your weekly meals.

 Preparation for the curry:

1. In a hot pan, add the olive oil, garlic and fry the onion until golden brown.
2. After add the ginger and fry for another 10 seconds and then, add all of the spices.
3. Fry until the mixture is fragrant and then, pour in the lemon juice and coconut milk and season with salt and pepper to taste.
4. Allow to simmer for 5-10 minutes until reduced slightly and then, add the prawns.
5. Allow the prawns to cook in the sauce for 10 minutes.
6. Serve the prawns and sauce over cauliflower rice with fresh thyme.





After, I did a beautiful salad with all the rest of the basket that Avo&Co brought me....Super yummy!!!
